Sunday Perch!

Have my Mom over every Sunday and she loves fish. Any way, shape or form. Had some perch in the freezer. Dipped in butter and rolled in a seasoned Ritz cracker coating. Onion rings and broccoli.

Baked, Tom. Did 20 perch. Sent some home with my Mom and have plenty left. Perch sammich or two tomorrow.
You can't beat perch. My favorite.
May I assume you're not here to inquire about the alcohol or the tobacco?

You'd crack up on our Michigan outdoor board there is a crusade to bring down every restaurant that serves Zander labeled as perch... One guy actually calls the BBB and FDA.... They'll purposely go to restaurants serving 15-20 AYCE peel back the batter and expose the truth.... It's stupid but quite hilarious....

Baked Butter Herb Perch

2/3 cups of crushed Ritz Crackers
1/4 cup grated Parmesan cheese (Fresh)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon of salt
1/4 teaspoon garlic powder
1 pound yellow perch fillets

Preheat oven to 350 degrees
Pour butter into a shallow dish. Combine cracker crumbs, Parmesan cheese, basil, oregano, salt, and garlic powder in a separate shallow bowl.

Dip perch fillets into melted butter and press into the seasoned cracker crumbs to coat. Arrange coated fillets on a baking sheet.

Bake in the preheated oven until the coating is browned and fish flakes easily with a fork, 25 to 30 minutes.

I baked for 23 minutes. I went until crispy.

This is an absolute killer recipe, Billie!
