Wood duck and black raspberries

Very simple and delicious!

6 wood duck breasts
Butter
Raspberry jam
Wild black raspberries
Sparkling cider
1 quart zip-lock bag
Feeds two comfortably

Prep your wood duck by taking off fat and anything else.
Then put 2 or 3 handfuls of washed black raspberries in a 1 quart zip-lock bag and smush with fingers and empty into a small sauce pan then pour in a little sparkling cider into the pans also. Proceed to pour some more into the bag, shake around and pour into the pan while it is on a low to warm heat and stur. Next grab another handful of black raspberries and drop them into the sauce. (NOTE you can use a wine or beer to replace the sparkling cider but thats on you.) Then for the wood duck grab a large non-stick pan cover it in butter so the whole pan is covered and there is melted butter around the base of pan. You want this at a low to medium heat towards the low side. Apply duck to pan and cook on side 1 for around 3 minutes give or take. Before you flip apply a little raspberry jam to each breast then flip and cook for about 2 to 3 minutes. You can cook less or more depending on how you want you meat cooked. Take off and let sit. You will be left over with a different "sauce" in the wood duck pan and your gonna put that in the black raspberry sauce and stir. (NOTE while cooking wood duck stir black raspberry sauce occasionally.) Cut into either .25" slices the long way or little cubes and cover them in the warm sauce that has just enough natural sweetness to match the wood duck and enjoy. :old_glory:
