Preserving legs

How do I know when they are done and safe to hang? I cut mine at the first joint above the spurs and they have been in Borax/salt mix for about a month now. I trimmed up some skin and cartilage yesterday and some of the fatty meat on the back side of the leg seemed pretty soft still. I only had the cut ends in the Borax mixture, which seems like most people do. Does it just take a while to fully dry them out?
