Standing Rib Roast & Potato Wedges

When I was growing up, we went to Grandma’s for Sunday Dinner. She always served standing rib roast,
smashed potatoes with gravy, & peas. I have always loved standing rib roasts so, when I saw that Kroger
had them on sale for $5.97 a pound, I had to buy a 3 pounder.

Instead of smashed, I went with potato wedges. The temps were quite a bit different & since I will let
the meat rest for 15 minutes, I was able to fry the wedges during that time frame. Also, I didn’t have
any peas.

I was able to get all the prep work completed during the 15 mins pre-heating time.

The platter is 1 my Mom used a lot. It’s probably almost as old as I am & is in better shape. LOL

The roast came out nice & crispy on the outside & pink & juicy on the inside. It was not as good as I
remember Grandma’s but it was real tasty. The wedges came out good as well with a nice crispy
crust & done just right on the inside.



Air Fryer Roast Beef with Herb Crust (Standing Rib Roast)


Ingredients

• 2 lb beef roast
• 2 teaspoons garlic powder
• 2 teaspoons onion salt
• 2 teaspoons parsley
• 2 teaspoons thyme
• 2 teaspoons basil or oregano
• 1/2 tablespoon salt
• 1 teaspoon pepper
• 1 tablespoon olive oil

Instructions

1. Preheat the air fryer for 15 minutes at 390 degrees. Combine the garlic powder, onion salt, parsley, thyme, and basil, salt, and pepper.
2. Rub the roast with the olive oil then rub the herb mixture over the entire roast.
3. Place the roast in preheated air fryer. Set timer for 15 minutes. After 15 minutes, remove the basket and turn the roast over. NOTE: If the roast is standing, no need to turn.
4. Reduce the temperature to 360 degrees on the air fryer and return the roast. Roast the beef for 20 minutes per pound (for rare) or 25 minutes per pound (for medium-rare), checking the temperature of the meat periodically.
5. Allow the roast to set for 15 minutes before cutting.


Air Fryer Potato Wedges

Ingredients

• 2 russet potatoes (rinsed and dried)
• 1 teaspoon olive oil
• 1 teaspoon Kosher salt
• 1 teaspoon crushed rosemary or Italian Seasoning
• 1 teaspoon crushed thyme leaves (if using ground, only use 1/4 to 1/2 teaspoon)
• cooking spray (optional)

Instructions

1. Cut potatoes in half, then cut into wedges. Each potato should make 6-8 wedges depending on the thickness of the potatoes and the desired size of the wedge.
2. In a large bowl, toss together potatoes with seasonings and olive oil.
3. Spray the basket of the air fryer with cooking spray. Add the potatoes and if desired, spray potatoes with cooking spray for an extra crispy potato wedge.
4. Set temperature to 390 degrees Fahrenheit and the timer for 15 minutes for regular sized wedges, adjust timing by a minute or two if the wedges are thinner or thicker.
5. Want extra crispy wedges? Turn up the heat to 400 degrees Fahrenheit for an additional 2-3 minutes at the end of cooking time.
6. Serve immediately.

I'm in! Looks great. Prime rib is one of my favorites. Rib eye of any sort is my favorite cut of steak!
May I assume you're not here to inquire about the alcohol or the tobacco?

Thx. There was a restaurant in Tampa that had king & queen cuts of prime rib. The only difference was the size.
I tried to eat there at least once a month. I have to agree with you on ribeye.

We have a local supper club that has Prime Rib
on Saturday nights. Best I've ever had. We don't go up there often enough. They have the king and queen cuts, as well. Nothing better than good prime rib!

I thought about it but that would have left several pieces. Besides, the fat does add some flavor.

Thanks for sharing. It's been a while since I've had prime rib and I need to fix that.

That looks good. I don't recall ever having a standing rib roast. It looks cooked just about perfect.

Basically it's several rib-eyes with the bones left in. This only had 2 bones so it was hard to keep upright.
It's just a tad over done for me. I like more pink with blood dripping.

I'll have to try one soon. I can do medium rare but often find that it's a little too rare when I order a steak that way. I prefer a little closer to medium than rare.

I got one of those digital thermometers for cooking roast especially rib roast since I don’t want to screw up such a good piece of meat. Thing works perfect. Can cook meat on the grill outside and monitor it in the house as well.

Mine connects to an app on my phone. How did we ever cook with just a campfire?

I have 1 as well. I tried to use it but the door won't close correctly over the wire.
I did check the temp & it was 143 & should have been 135. I may look into a cordless
digital.
