Making the pheasant stew today.
Browning the legs: Carrots, celery, onions, garlic After 1 hour in the oven It needs another 2 for meat to fall off bone and then the bones will be used for broth before finishing the stew.

Don, I just checked out the Firebox Stove channel. I'll have to look at more but I already like it. I should have added earlier that I added a couple oberhasli goat bucklings to my llamas back in the summer.
They've grown quite a bit since the photos. Their names are MJ and Kobe. . They are like a couple dogs. They love attention.

Finished stew last night in a classy plastic bowl. I did not add the milk and used potatoes instead of rice.

Cool story Swampstalk.
I just finished grinding antelope.
20 lbs of burger before adding a couple pounds of pre-ground beef suet. Beef suet added and reground to blend. I'll wrap and freeze tonight.

Ground stuff looks great. We do venison hamburger occasionally with pork fat or bacon. Did a bacon wrapped roast in the smoker last week.

Hey Hobbes I see you grind your antelope and then freeze it. How well does it stay ? I was told that I should leave the meat in large chunks and then just grind what I need as it will last longer in the freezer . Maybe your ground doesn't last like mine lol I still have several pieces from last year in chunks that are in excellent condition in the freezer.

I've not had a problem with it. We wrap in Saran wrap then freezer paper, but burger doesn't last a year here very often. I did find some of last year's burger burried in the freezer a week or so ago that we just ate. I've left big packages for grinding also but prefer to get it over with.

I usually grind my deer and haven't had a problem I was told pronghorn is different if you grind it and leave for a long period not sure why . I know some say don't grind with pork or it will go rancid sooner maybe same for pronghorn It does mean more work to make a few burgers for dinner lol

You guys go through some type of time warp or what? Looks like January out there! Your partner has got a good idea. Good enough for bears! Good time for cookin' and eatin', instead of hunting!

I found a bull while glassing. He was too far to make it to him before dark. We'll look for him in the morning and hope no one else saw him. Ive been in there before, actually just a few weeks ago in archery.
It'll be a very cold morning.
