Griddle Cooking
I've edited my "Stir Fry" thread to just include anything cooked on the Griddle. There was one of these that Tom kept going for a while, but it's quite a ways back now, so add to this one if you like.
I'm not the chef that Tom is and I'm still learning on the griddle. I've done NY strip steaks on it once, but think they could have been better. I've made burgers and brats with onions and peppers a couple times that turned out well. I've done shrimp in butter and Old Bay seasoning twice that was excellent. The chicken tacos that I previously posted were excellent also.
Lunch today on the griddle was chicken stir fry. The veggies were precut fresh vegetables from the grocery. I would have preferred the carrots were cut thinner, but the whole baby carrots were still good. They added plenty of crunch.
I cooked both chicken and veggies in avocado oil, an Asian spice mix that we have, and soy sauce. It was quite good. If not for this dang low carb thing, I'd have done some stir fry rice too.

Re: Stir Fry
My gas grill craped out last week so after watching pics and YouTube videos of food on "griddles" I ordered a BSG 36''...gonna be hard keeping the weight off now for sure.

Taters while camping a few weeks ago:
I did sausage links, eggs, and canned biscuits the next morning:
The biscuits were too thick, so I had to pull apart and try and put middle on grill. It was an experiment that didn't work so great but still tasted good.-

Re: Griddle Cooking
I cooked an odd combo tonight but had asparagus that needed cooked tonight. I was cooking wings in the fryer, so they had asparagus on the side.
Wings were dashed with a Webber steak seasoning then dropped in the fryer. I let the oil get to 375 before dropping in the wings, but obviously should have cooked half at a time. The temp dropped to 225 and couldn't make its way back up past about 275. They were definitely done but 350 would have crisped the skin a lot better. I smothered in Frank's Red-hot Buffalo Sauce after they drained. I still ate more than I should have.
If I have one complaint about the griddle, it's that I'd like to run the flame a little higher than it will go.
What I do like is cooking outside in the summer and not heating the house up.

Did the same tacos again, but had the bigger carb balance tortillas. Turned into more of a burrito.
