The Bird - 32.5 lbs
Weighed The Bird this evening after removing from brine, removing neck, packing in 2 sticks of butter and bagging. He weighed 32.5 lbs. We had to use two bags bagged from opposite directions since the first wouldn't seal. Gives new meaning to Dr. Seuss's "roast beast". He fills out the roasting pan rather well.

No stuffing. I'm not sure it would ever get done if packed full of stuffing. It's starting to look done, so may have started early. Going to check with meat thermometer in 25

Ten of us didn't quite make it through a breast half. I don't think anyone touched the dark meat. I'll carve the other half tonight.

It was good, as good as any bird I've cooked. It was not tough. It cooked 5 hours. I left it covered afterwards for 2 hours and was still hot. It probably continued to cook, so I should have uncovered it.
