Pork Loin Roast

I found a pork loin roast hiding in the freezer & decided to fire up the air fryer. I added a couple of spuds
cut into wedges & used the same spices as I did on the roast. Everything turned out really well with the
roast being crispy on the outside & moist on the inside. There will be at least 2 more meals out of the roast.

Pork Loin Roast

Ingredients

• 2.5 lb Pork Roast
• 2 tsp Olive Oil/ Spray Olive Oil
• 1 tsp Dried Italian Seasoning
• ½ tsp Kosher Salt
• ½ tsp Garlic Powder
• ½ tsp Ground Black Pepper

Optional Ingredients

• 4 tbs brown sugar
• 2 tbs smoked paprika
• 2 tsp ground mustard
• 1 tsp onion powder
• 1/2 tsp cayenne powder

Instructions

1. If your roast has a layer of fat on top, cut the fat crosswise in slits, every ½ inch or so.
2. Pour/spray the olive oil over the roast and rub all over until completely covered.
3. Combine all dry ingredients in a small bowl.
4. Cover the pork loin with the spices
5. Place the pork in the air fryer basket.
6. Cook in the air fryer at 360F for 20 minutes. Flip the roast over and cook for an additional
25 minutes, or until the pork reaches an internal temperature of 145F.
7. Let the roast rest for 5 minutes before slicing.
