Jambalaya

Jambalaya

Ingredients

• 1 package of Jambalaya mix
• 3 ¾ cups water (I used chicken broth)
• 1 bunch green onions chopped
• ½ pound mushrooms chopped
• 5.8 ounce can of black beans (I had to use black-eyed peas, no black beans available)
• 1 pound smoked sausage
• 1 chicken quarter cooked
• 2 tablespoons vegetable or olive oil

Directions

1. Put all ingredients in a large sauce pan & stir until well blended
2. Bring to a boil
3. Reduce heat to low, cover, & simmer for 25 minutes or until rice is tender.
4. Remove from heat & let sit for 5 minutes.
5. Fluff with a fork & enjoy.

I took the standard recipe on the back of the jambalaya package & tweaked it little
to make it more my own. It turned out really well & will be enjoyed during the football
game this evening. But I did have to try a small bowl for brunch. As Grandpa Jones used
to say: “Yum…YUM!!!!”

Sometimes you just have to make due with what you have. My initial plan was to make black beans with
yellow rice & chicken. But I couldn't find what I needed & went with what I have. Beans are part of the
new "diet" I have been trying to stick with since last Oct to avoid a repeat of some health issues. Hard to
find andouille around here especially on short notice & I haven't made any from venison in several years.

Thx. I can get them dried but wanted canned as I was in a hurry. That's 1 thing
I miss about living in the Tampa Bay area, the Cuban food especially paella &
ropa vieja. I have made ropa with venison & it turned out real well.
