TURKEY VEGETABLE SOUP

I decided to make an 8 quart slow cooker batch of wild turkey soup with the bird I got the other day.
I had 6 cups of turkey broth but, due to all the extra veggies & barley, I added 4 cups of chicken broth.
Sadly, I can’t eat corn so I didn’t add any. I basically doubled up on everything. You’ll need to salt &
pepper to taste.

For a few years now, I have been using baby carrots & red potatoes to cut done on the prep work.
Now all I do is cut the babies & tators in half.

I’m sitting here eating a bowl as I type this. It turned out really well so I am pleased.




TURKEY VEGETABLE SOUP
Ingredients
• ½ onion diced
• 2 tablespoons butter
• 6 cups turkey or chicken broth
• 2 cups cooked turkey or chicken
• 14.5 ounces diced tomatoes with juice
• 2 medium carrots sliced
• 4 celery stalks sliced
• 1 cup mushrooms chopped
• ½ cup corn
• ½ cups peas
• 1 small potato peeled & cut into ½” cubes
• ½ teaspoon poultry seasoning
• ½ teaspoon basil
• 2 teaspoons parsley
• 1 Large Bell Pepper
• Barley – Optional If you use Instant Barley, put it in for the last 15 mins.

Instructions
1. Place the turkey meat in a pressure cooker & cover with water. When the weight starts to rock,
cook for 30-40 minutes.
2. Remove the meat from the cooker &, after cooling, remove bones, ligaments, fat, & whatever
else isn’t meat. The meat should literally fall off the bones & the ligaments will be real easy to
spot & remove. Strain the water from the cooker through cheese cloth & save.
3. Cook onion in butter over medium heat until it starts to soften, about 3 minutes.
4. Place in the bottom of a 6qt slow cooker.
5. Add remaining ingredients (except parsley) and cook on low 6-8 hours or until potatoes are tender.
6. Stir in parsley and serve.

I wonder how long it will take? Maybe 3 hours?

I just had some killer soup. Should’ve took a picture and posted it, but once I tasted it I didn’t think twice and ate it
