Clean Out The Veggie Drawer Casserole

I had a few veggies that were approaching their expiration date & my cooking gene kicked in.
I also had 4 chicken breasts from Omaha Steaks that were marinated & fully cooked.

Ingredients

• 4 Chicken breasts
• Spaghetti Sauce of tomato Sauce
• Pasta (I used spaghetti)
• White button mushrooms diced
• 1 large bell pepper sliced into strips
• 1 Sweet onion sliced
• Shredded cheese of your choice

Directions

1. Start the pasta cooking & build the casserole. Pre-heat the oven to 400.
2. Layer the bottom of a casserole dish with the sauce. I had to use tomato paste.
3. Add a layer of onions, mushrooms, & more sauce.
4. Layer the chicken topped with the remaining sauce.
5. Add another layer of onions, the pepper, & cheese. (I used Parmesan.)
6. Bake for 30 minutes.
7. Plate the spaghetti & top with the casserole & some grated Parmesan.

NOTE: You will probably need to adjust your cooking time & temp if you are using
uncooked chicken.
