Seemed Like a Good Time for some Boneless Pork Chops, Stir Fried Veggies, & Brown Rice for Supper

I had a zucchini, thx Lisa, & a couple of Omaha Steak boneless pork chops, thx Etta,
that were calling my name so they made it onto tonight’s supper menu.

It’s been forever & a day since I’ve stir fried anything & decided to give it a shot.

As usual, everything turned out real tasty. I may have to do more of this cooking stuff!!

Veggi Stir Fry

Ingredients

Veggies


• 1 Sweet potato
• 1 Zucchini
• 1 Portobello Mushroom
• Chopped Sweet Onion
• Mild Green Chilies to taste
• EVOO
• Water as needed

Spices to taste

• Worchester Sauce
• Parsley Flakes
• Lowry’s Seasoning Salt
• Smoked Paprika
• Italian Seasoning

Directions

1. Cut the potato, mushroom, & zucchini into small chunks.
2. Add the EVOO, the potato, & the spices to a large skillet.
3. Cover & simmer until the potato is semi-cooked, about 10 minutes stirring frequently.
Add water as needed to keep the potato from sticking.
4. Add the zucchini, mushroom, onion, & chilies covered & simmering stirring frequently
until all veggies are done, about 10 minutes. This is a personal preference. I like my veggies a little crunchy.


Boneless Pork Chop


Ingredients

• Boneless Pork Chops
• Whatever spices/rubs you prefer.


Directions

1. Preheat the air fryer to 380 degrees F (190 degrees C).

2. Season each pork chop with spices/rubs.

3. Place chops in the basket of the air fryer and cook for 10-14 minutes; flipping halfway through cook time.

4. Let rest for 5 minutes.

5. ENJOY!!

I wish you had cut the Zucchini up before you took the picture. I’m on board with everything else. I wish these threads had smell-a-vision.

Take a quarter & scratch 1 of the pics really hard & you will get the full smell-o-vision effect.

I had to split the zuke to scoop out all the seeds as they could cause some major health issues like I had last Oct.
