Mr. Hobbes, do you have a system to do them. I do them in different ways, just because. But I'll go low and slow for 3-4 hrs and then tent em for the tenderness and finish with sauce. BTW, you're definitely old school, well deserved and earned :thumbup: . My ass is modern with a pellet smoker/grill.

Man that's right on the CWS.. Hobbes your the man running coal in that thing cut my teeth in one with the Minion method but it made ya pull your hair out.. Converted mine to propane with a burner, well I didn't had someone much handier than I do it.. Pretty slick, easy temp control, small cast panon burner with chips filled water bowl with sand..

I don't have much of a system. I don't think it ever gets much over 200F. It was down to 150 when I came home. I've stirred the coals and added some hickory chips. It's at 185 now. They've been on about 4 hours. I'll probably put them in a Crock-Pot soon when the smoke dies down and cook them until the bones pull away easily. I don't want to chew meat off the bone. I may taste them tonight but probably eat them tomorrow. I should have got to them on earlier.

I've had them wrapped for a little while, but they need more cooking. We'll put them in a Crock-Pot tomorrow morning then eat them after church.

I did have to test them and ate a couple. Good but not falling off bone.
