Blackstone Chops

My wife mentioned chops tonight and I said heck yes after seeing the chops that Hognutz cooked up. Nothing but some Mesquite seasoning with a little salt and pepper.

Funny you say that I had a few batches a couple a month ago that were not tender, even when I nailed um.. They we're cooked perfect 140-145..

I'm confused and been confused for a while about this, there is one cut of chop I prefer over the others and it's not the most popular.

One thing with pork most of it is not graded unless you get into the heritage breeds.. Buying pork is much like buying USDA Inspected or roll beef where it's simply inspected and not graded:select,choice,prime. CAB has its own grading that is slightly higher than choice to meet standards, certified Angus doesn't mean it's Angus.. Your gonna get better ungraded pork on average than beef..

With that being said we have a place here that deals in great pricing on Inspected, before they got huge, if you were local, went in asked for a 1 3/4 ribeye let's say they'd go through their Ribeyes they were working on picked the best and cut you a choice or better steak for cheap even by 10 years ago standards.. You'd always look through the whole loins they had out and if you saw one that looked incredible you'd buy the whole thing have it cut and individually wrapped.. I've scored prime doing this..
