Smoker Going
I finally got the charcoal smoker going this morning. I planned to yesterday but I've got a painting project not going as planned.
I planned to smoke a pork shoulder, but decided on pork sirloin roast. I've done one in a slow cooker once and decided it was too lean. However, the selection of shoulders wasn't impressive and I'm trying the sirloin on the smoker. I didn't realize the package that I bought was four pieces and not one.
I also put two wild turkey breast halves on.

How ya plan on doing it?? Probably not gonna take to shred, 130 slice like steak? 160 chop?

I'm not sure. I had wanted to shred, but that didn't work so good when I cooked these before. I'll probably slice it thin to start. I'm thinking slice thin for sandwiches with whatever condiments. I like slaw on it but we'll see.

Mr. Hobbes, are you concerned about the Turkey drippings landing on the pork ? I've done a bunch of Turkey breast on the smoker. Always brined em, then season and smoked. Sliced thin like sandwich meat and made samwiches. Either way it's a great day to be a free American, please enjoy !

I would normally put pork over turkey but was worried I'd turn the turkey into jerky if set close to coals. I figure I've cooked everything well enough that it's not a concern.
I've tried both now. The turkey is good and should be good when sliced. The pork has a good flavor but I think it needs a little more time. The meat is a little chewy.
I'm not sure what I did to only get half the turkey in the frame.

I saw folks talking 145 online. After I thought about it, I figured that you were thinking beef when I read back and saw medium rare. I like beef medium rare, but I like my pork cooked a little more. I took it to 160 on the smoker. I'm finishing it off in an insta pot

Good flavor but not a pork shoulder. Tougher and dryer. I went ahead and chopped it, added some salt and juices. It's not bad but just not what I was craving. I'll stick with a pork shoulder next time.

I sliced one of the turkey breasts tonight. Really good. Not dry like you'd expect. It's a little more pink from the smoke than the photo shows.
