Rainy Day Slow Cooker Meal

Been planning on doing some Mexican, my favorite is Carnitas anything..

Prepped the butt last night, trim, Rub make juice I hate hand juicing BTW..

Into the throw in leave come back 8-10 hrs later finished meat machine at 7am

About an hour out made my sides, I made a simple Arroz Rojo rice with a whole Jalepeno and half an onion.. Rice is simple good.

Next up, Mexican Salad with homemade lime dressing.. It's seriously stupid easy and incredibly cheap and down right tasty.. This definitely is gonna be a consideration for get together sometime because of the above mentioned, plus, it's vibrant, unique and has nothing to spoil at outdoor events..

The roast is delicious straight out the cooker, but when you give it a quick hot fry and a drizzle of the strained juices til the drizzle soaks in the meat it comes to life, it's amazing.. I normally don't get seconds, but maybe eating a bowl a ice cream an hour out expanded my stomach..

Cougar approved, wouldn't leave me alone.. Woofed down a bowl with it mixed in, second bowl she picked out the meat..

Tommorow Tacos..I picked some red onion may top with that.. Dunno

My guts are rolling just looking at the picture! Looks stupid good! All day long for me!
Lunch tomorrow would be pork on a hard roll Sammy for me.

I could skip the onions but the rest looks great. It's hard to beat good pork.

Finished up the carnitas last night.. I had soft and hard shell opted for hard, simple toppings, meat has so much flavour..

Crazy after straining the "juice" and putting in fridge over night, I bet I skimmed a half inch of fat off the top..

Oh, dangit. I'm 4 days into a low carb diet and holy heck that looks good. I'm buying a pork roast tomorrow and breaking out the smoker. I'll just use low carb shells.

I may buy some ribs too and just go with a dry rub, no sugar. Don't want to waste any good smoke.
