Mashed Potato Venison Casserole

I hadn’t come up with a new dish in quite a while, so I decided to try combining a couple of recipes & came up with this.

I ground the venison yesterday while the meat was still frozen. I left the skins on the tators when I mashed them & used
a Mexican style shredded cheese that consists of Monterey Jack, Mild Cheddar, Queso Quesadillo, & Asadero cheeses.

I don’t have a 9”x9” dish, so I went with a 9”x13”. I had to make some extra sauce to cover the meat mixture.

It turned out really well but it was more time extensive then I expected. I boiled the tators at the same time I was
making the meat mixture. The tators were done about 10 minutes before I put the dish into the oven. I had the
tators mashed about 15 minutes before the meat was baked. After putting on the soup, tators, & cheese, I cooked
it for about 20 minutes more. All told, it took about 2 ½ hours from start to plate.



Mashed Potato Venison Casserole

Ingredients

Meat Mixture


• 1 ½ pounds Ground venison
• 3/4 cup quick oats
• 2 eggs beaten
• ¼ cup chopped onion
• 2 teaspoon salt
• ¼ teaspoon pepper
• 1 ½ cups tomato juice
• cup chopped bell pepper


Sauce


• ½ cup catsup
• 1 tablespoon mustard
• 2 tablespoons brown sugar
• 1 10 ounce can cream of mushroom soup
• 3 quarts mashed potatoes – about 3 pounds
• ½ pound melting cheese slices – your choice

Directions

1. Pre-heat oven to 350.
2. Combine meat mixture ingredients & pack in a 9x9 inch pan.
3. Whisk together the catsup, mustard, & brown sugar.
4. Spread over the meat.
5. Bake ay 350 for 1 hour.
6. Spread the mushroom soup over the baked meat.
7. Layer mashed potatoes over the baked meat.
8. Place slices of cheese over the mashed potatoes.
9. Return to the oven until completely heated.

Good vitals Jorge, and with the bigger dish you used, than that you had on hand, meant, you had a "LOT" extra and with you spending all that trouble and time makin' it, I sure would've thought you'd have wanted somebody extra there to help you eat it :banghead:

Hint Hint, got a buddy from N.C. that likes to eat, headed to Michigan with me next week and it wouldn't be a problem swingin' by on the return trip :D :cheers:

Thx. It was good. I have surgery coming up & have a lot of testing & Doc appt over the next couple of weeks including rehab.
I'm not sure when I'll be home.

I hope so. I did very little squirrel hunting last fall, no turkey or deer & now no spring.

I went in yesterday for my final cortisone shot. Hopefully, I'll be good to go till October. Going on a week long fishing trip soon.

Thx. Hopefully your shot holds up. Doc gave me the option of shots but, last time, I screwed up & waited
too long. I put myself through a lot of needless pain so I decided to go full bore & get it done sooner
than later. What are you fishing for? & don't say fish!!

We go to Mn.for a week. Been going for 35 years. Same place. Walleyes, perch, crappie and mongo bluegills.
