Back to Winter 1

Post by ICDEDTURKES »

With snow in the forecast decided on a small butt roast.. Staring at this thing night before didn't really know what to do.. I had a liquid recipe saved I had everything for beef broth, Balsamic Vinegar, Soy, Worcesteshire, red pepper flakes, honey..

In the slow cooker early.. Didn't really feel like a roast dinner so I made pork roast chili.. Pretty simple
2 c pulled pork
1 cup Beef Broth
1 Pepper
1 chopped small onion
3 minced garlic cloves
1 Chipotle in Adobo Sauce
2 tsp chili powder
2 tsp Cumin
1/2 cup salsa
Oil

Heat oil , add Pepper, Chipotle and onion. Saute til tender crisp, add garlic sautee til fragrant. Add remaining Ingredients besides pork Bring to a boil, reduce and simmer til thickened about 10 minutes, add pork stir until heated through, serve..

The recipe can easily be tweaked I added corn, Jalepenos be nice.. One major change 1 cup broth not enough I used closer 2.5 with a 3 lb butt , shredded half the butt making four good bowls for reference..

Pretty different way to use pork have never had it before. It's super hearty.

That really looks good. 15 dashes of Tabasco and I'd clean that bowl up!
A piece or two of honeyed up cornbread would bode well with that!
May I assume you're not here to inquire about the alcohol or the tobacco?

To be honest, I don't know what Adobo is. I guess maybe I wouldn't need the Tabasco. My bad!

It's pretty hot, alot of seeds.. Try it you can always add more Peppers as you go or slowly add in your hot sauce.
