Carnitas + (Day2)

Realized haven't had my favorite Mexican dish since Covid. Went to the store other day picked up a 5lb butt

Prepped it last night.. Love hand juicing oranges :banghead: Spice rubs basic..

Let her rock in crock pot all day.. Let it rest. Made my rice, thought rice would be blah as hell. Surprsingly it wasn't, better than Mexican restaurant.

Filtered the juices, shredded pork. Threw some into scorching hot pan, poured a lil juice over the top, let that fry off. Into shells. Nothing major a lil cheese, Cilantro and Purple Onion.. Meat has so much flavor nothing really needed

I think I'll get three days outta the butt. Tommorow Mexican pizza Thursday maybe Burritos

May I assume you're not here to inquire about the alcohol or the tobacco?

I did some pork tacos last night but didn't like how they turned out. I didn't like the flavor of the meat. Both of my son's thought it was great. I like carnitas but I definitely won't try doing them the same way I did last night.

Yours look really good. I'd probably skip the rice. Anytime that we go to a local Mexican restaurant, I bring the refried beans and rice home for my son to eat.

This one's really simple.. I thought big would be bland like restaurant rice.. As basic as it was had good flavor..

Splash of EVOO
2 cloaves garlic minced
1/2 small onion chopped
1 c long white rice rinsed
1.75 c chicken broth
2.5 TBL tomato paste
1 ish TBL chopped cilantro

Heat oil med heat. Throw in garlic til fragrant, add onion cook til translucent.

Add all but Cilantro. Whisk in paste. Bring to simmer, add Cilantro, lower heat cover simmer lightly for 15 or until moisture is gone.

Move off heat, leave covered 10 minutes fluff..


Made this the other night it's very good. It's got alot of flavor with added chicken be a stand alone meal..

No doubt about that and I'm sure it's delicious, the way it is!! :thumbup:


Old bad habit, kinda' like salt use to be, gotta' smother it in hot sauce, besides, Larry has the cook do everything plain for his tastes :shock:

I put hot sauce a quite a bit of stuff. Hot is hard to cook with everyone's palette or threshold is different.. Making chili for a group sucks, you either have to make two batches or have the below on hand..

That's where your hot sauce comes in.. As well as crushed red pepper, cayenne powder, Creole seasonings, diced Jalepenos.

Ya', all they have in Mexico at camp, are the, maybe buck shot size red peppers, and you have to crush em' yer'self, 1 at a time :shock:

I've been doing thislil Tortilla pizzas all fall, figured it would be a great use for leftover pork.. Heated pork in pan hot with a drizzle of saved juice.. Instead oc Pizza Sauce, used Enchilada cause.. Topped with Peppers, Onions, Corn and Jalepenos.. I had black beans, Cilantro and olives but had enough..

Ate 2 coulda ate 5..
