Balsamic Glazed Muffin Meatloaf

I hate making meatloaf, no matter what I do more egg less egg, crackers, oatmeal etc etc.. So tonight decided to do the ones in the Muffin tins. What a flipping life saver and cook time is about half. Topped with a Balsamic glaze. I roasted Baby Red and Gold potatoes, carrots with a simple Maple syrup butter glaze.

Not sure if it was hitting gold on a recipe or the Muffin tins, but the easiest meatloaf I've made.

Ok so last meatloaf I attempted was November 17. How do I know, well I decided to make a meatloaf instead of hunting. So needless to say meatloaf was a crumbly disaster, so as I'm eating what constitutes a smashed up overdone pile of hamburger on my plate I check cell cam, oh really cool a 10 pt standing 50 yards on a run from where I'd a been sitting yeah twas a great night

That's lookin' great to me and I love meatloaf of any type & that is lookin' fine with me :thumbup:
