turkey schnitzel

stole the idea from here or elsewhere,,,but liked it so made it mine,,,

prep by beating some eggs and season them (I used cajun seasoning and pepper)
put some flour in a wide bowl or shaker bag
put some panko crumbs in another,,,season them panko crumbs same as eggs
turkey breast sliced against the grain to 3/4" thick (will go slightly thinner next time),,pat dryish
pound them slices flat with a meat hammer

light coat of flour on the slices
dredge in egg wash
roll in the pankos

fry in olive oil with some butter added till golden brown or so

eat

I have been doing that meat hammer routine for the last 4 years since I started shooting TSS. Those pellets pop right out when you hit it with the ol meat hammer!

normally I don't have pellets in the breast meat,,,,,but yeap,,,ol' meat hammer will get them out
