I love peppers, bell peppers, not really fond of green and now I know why. Didn't know they went from Green, to Yellow to Orange. This week Meijer had the Aloha Peppers on sale which is a cross between Red and Yellow. So me and my taste tester put em on the list.
I looked at a number of recipes. Some called for petite diced tomatoes some crushed tomatoes, I opted for Jack's Salsa. Then Black Beans, Corn, Pepper Jack, Brown Rice. Was lazy didn't make a taco seasoning just bought it. For a lb of Burger, this made a crapload. I stuffed 6 halves and pictured below is what I have left. Easily stuff six more. So with all the leftovers I know what's for supper tomorrow. I bought 4.5" Tortillas for something else, so I will use some for Quesadillas.
So into the oven they go. 10 minutes to go cover in cheese. Ran outta Pepper jack topped with three cheese mozzarella. Pulled Garnished and Plated. They turned out really good nice spin on Stuffed Peppers. Changes, guess could brown burger but wouldn't gain ya much. Maybe try spicing it up dunno. Toppings, really didn't need it, lots of flavor as is. I did put a little Cholula on them. One thing I will do tommorow is saute an onion and mix it in.
Really easy quick one dish meal.
Note: I didn't Blanch them. They weren't crisp they weren't soft they were tendercrisp how I like em. I did throw one in microwave later and it did soften if that's how u like em

So I had so much of the Beef,Rice,Bean,Corn,Cheese mixture from the Mexican Stuffed Peppers and happened to have Street Taco Tortillas I made Mini Quesadillas. Be one Helluva Party Food
