I thought this might make a good complimentary post to my How to Clean a Squirrel
& may help someone who is not quite sure what to do with squirrels other than fry or bake.
There are a lot of recipes in the Camp Dinner forum.
How to Prep Squirrels
1. Cut squirrels into sections, cover with water, add salt, & refrigerate for 2-3 days.
2. Rinse squirrels with clean water.
3. Place in pressure cooker. Add water according to the cookers instructions.
4. Cook for 8 minutes after the weight has started rocking. 10 minutes for larger, older squirrels.
5. Turn off the burner but leave cooker on the burner.
6. After the pressure has been relieved, remove the squirrels with tongs.
7. Allow the squirrels to cool until the sections can be handled without burning you fingers.
8. Pull meat from bones.
9. After the meat has cooled completely, weigh it & divided into packages based on your needs.
10. Wrap in plastic wrap squeezing out as much air as possible.
11. Vacuum seal.
I knew those plastic wash tubs from the hospital would come in handy. I take 1 along every trip to Gobbler’s Roast to use when cleaning turkeys. The mushroom tubs come in handy as well.
