I had part of a bag of imitation crab meat left & wanted to have a cold lunch today.
The following is just what came to mind, spur of the moment. The relish & mayo
are just guestimates so use your own best judge based on what you like.
12 ounces of Imitation Crab meat, aka Alaskan Pollock, course chopped
3 stalks of celery fine chopped
10 small white button mushrooms finely chopped
1 tablespoon dill relish
1-2 cups of Mayo or Miracle whip
Pita Pockets
Mix everything in a large bowl & chill for at least an hour.
Load up a pita pocket & enjoy. BTW, Make sure you get good pockets that will
hold together or you may end up using a fork like I did.

I'm a huge fan of that fake crab meat,,,my Better Half buys me a bag or two each month - love them in mayo/relish mix like you did ,,,,that is IF they make it - I often just eat out of the bag for a snack,,I enjoy the flavor,,,,

I do the same thing. That's why there was only 12 ounces left out of a 3 lb. bag!!

Yep. I need to pick up some when I get to Sam's. Wally World has it but charges for 1 lb. what Sam's charges for 3.
Being German/Irish/Scottish, I be too damned cheap to pay triple price for anything!!

I would probably skip the celery, but other than that it sounds pretty good.
We used to make a "crab" dip with it that was great spread on crackers. it's been so long that I don't recall the recipe.

Grew up on crab salad ma made as dip or pasta salad alot of times made in a pan with butter
Sal's a Atkins junkie. Couldn't believe the sugar. May switch to canned crab virtually no carbs. Dunno how it is. They add a crapload sugar to imitation
