Loaded Cauliflower

Simple and delicious...don't forget those chives.

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
6 Tbs chopped Chives
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 cups Colby Jack Cheese ( may use cheddar)
8 oz container whole mushrooms, cut in half
Directions:
Preheat oven to 425°
In a large pan, place uncooked cauliflower bites
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese, mushrooms and cauliflower and mix well... place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles.Cover. Bake for 30-40 minutes .... top with remaining 3 Tbs chives and serve.

I can vouch for this one, good stuff! I make something similar, but use an immersion blender and blend up the cauliflower after I cook it. It pretty much tastes and looks exactly like some loaded twice baked potatoes. I'm gonna hafta try your version. It would seem that less of a mess would be created.

Looks good. But I'd have to be pretty loaded myself to eat Cauliflower.

I could get down and naked with Cauliflower, she had a good head on her, speaking of head we will save that for another day, but she moved away right outta high school, rumor was she got blowed outta shape by a dude name of Red Cabbage the night she lost her flower. They got married after they sprouted half dozen more and now run the salad bar in a big restaurant.

Ma that looks very good in your picture, both the wife and I like cauliflower so she copied the recipe and the next time she goes to the grocery store, we live 30 miles from the store, she is going to buy the stuff to make this, will let you know.

Ma, the wife is making this right now, chives were the easy part. I have a 3 ft. X 3 ft. stoned in area with just chives growing there right at the back door
and they stay green and usable all winter, even under the snow. House is smelling good Ma.

Excellent Ma, we had it for supper with a porkchop and will have the rest tomorrow night with whatever she decides. Ma, it will be another dish we will enjoy several times during the winter. Thanks Ma.

I cooked it last night as well. Went great with an 8oz filet. The wife and I both enjoyed it, thanks for posting!
