So For the bird killed Friday - I seasoned the legs and thighs with pepper and cracker boy, added the two cups of water and a couple of splashes of olive oil then pressure cooked for 35 minutes on high - the extra 9 minutes created magic!
Deboned and shredded
Used the remaining broth to cook some cauliflower rice, 1/2 a stick of butter, and added some meat back (retained some for some more turkey salad tomorrow) - made a great “turkey and rice soup” type.
Took half the breast and cut it into chunks, then covered with buttermilk with a few shots of tobasco and let soak a few hours in the fridge. Wife took some Kentucky Kernel seasoned flour and mixed half and half with carbquik. Drained the nuggets then Coated with the flour mixture
Fried in a combo of olive oil, vegetable oil and some butter.
Pretty good
