FINALLY!!!!

And then there was none! I finished processing the last of this years buck this morning making 10 1 ½ pound & 1 1 pound package of Backwoods Breakfast Sausage. The process for making this sausage is exactly the same as for the jerky except different spices are used. I cooked up a batch for lunch. It was pretty good except the pepper was a little stronger than I like.

I have several nice roasts, a couple of big backstraps, & several pounds of chunks to be used for chili & spaghetti sauce, 15 pounds of jerky, & 16 pounds of breakfast sausage in the freezer. All the equipment has been washed & stored. All I have to do between now & spring is ABSOFREAKINGLUTELY NOTHING!!!!

Don't know poundage-wise but I have about 10-12 bushies worth of meat!!

You may come up with an ideas to save money on it, and not spend it :lol: ;) :stir: :LMAO:

Never been so wet here, since I bought this place in 99 .. water runnin' everywhere for 1 1/2 mths now and water standin' in spots of my food plot yesterday morning, I've never seen :banghead: :banghead:

I do have the bucks head hanging on my light pole that I may clean this winter for a European mount & I do
need to draw up the plans for my new building but nothing real strenuous.

I walked around the place this afternoon when I burned trash & all I heard was squish, squish, squish. There
is a lot of standing water in the mud pit. Hopefully it will all settle before this spring when they come in
to do the final grading. There is a 4' tile that dumps into my creek on the far side & it is almost under
water. If it rains much more, the creek will over flow again. There were a lot of corn stalks in the yard
along the creek so it flooded sometime in the last couple of weeks but I missed it.

I already have plans & materials to build a new shooting range this spring & saved capstones from the old
barn wall to set & mark 21', 25, 50, 75, & 100 yards. I'll bury the stones just above ground level so I can
mow over them. Nothing to do with the mud pit except grass it.

Your way behind George. Me and wife processed 5 deer and been done for a while now. (Well she did take 30lbs if boneless meat to barren river processing to have summer sausage and bacon made) WTH you been doing LOAFING. LOL. ( just tryin to stir ya up here). YOU DID GOOD BUD. And I’m finished with her euro mount of buck this year. All I gotta do is stain antler,(had to fix right g3, first time doing so) paint skull, and put on plaque. Shouldn’t take long.

It was cold enough here so that I could let the buck hang for a week. After I got it cut up
& all the meat that I needed ground, I found that I was short on pork & ciuldn't get any
until last Thurs. Then other things got in the way so I didn't get to finish up until Sun.

I have a hog head to finish up as well as the buck but they will get done in time.

I love good venison breakfast sausage. We have a amish butcher who does excellent summer sausage. Soon as my son, daughter or nieces shoot another deer we will. E stripping the meat into a cool and taking what I have frozen to get jerky made and baloney

If you haven't already, you should save a few pounds for spaghetti sauce & stew/soup. I hate soupy soup
so mine is closer to a stew.
