CREAM of MUSHROOM PHEASANT

A friend & her husband do a lot of pheasant hunting & gave me 4 nice breasts. I have only cooked pheasant
once & didn’t have any recipes. I found this 1 online & tweaked it a little using green onions & milk as well
as adding the carrots & celery. The birds went into the slow cooked at 08:00 this morning. I almost always
cook low & slow so the birds should be ready about supper time.

The cooking was done by about 03:00 this afternoon so it only took 7 hours of low & slow. It turned out
pretty tasty & will make a good supper tonight.

CREAM of MUSHROOM PHEASANT

INGREDIENTS

4 small pheasants or 4 large breasts, cleaned and rinsed
1/2 pound sliced bacon
1 small onion or green onions, chopped
1 (1 ounce) package dry onion soup mix
1 (4.5 ounce) can sliced mushrooms
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
1 cup water or milk
salt and ground black pepper to taste

Optional

Carrots, chopped
Celery, chopped


DIRECTIONS

1. Wrap and drape the bacon over the birds, covering the pheasants as much as you can.

2. Place the pheasants into a large slow cooker.

3. Whisk the condensed soup, sour cream, water, chopped onion, onion soup mix, and mushrooms
together in a mixing bowl.

4. Season to taste with salt and pepper.

5. Pour over the pheasants.

6. Cook on Low for 8 to 10 hours or on High for 5 to 7 hours.

It was pretty good. I did learn a lesson. I used thick, hickory smoked bacon. The hickory taste
almost overpowered everything else. Next time, regular bacon with no flavoring.
