Hadn't shot a deer since 2013 season therefore I have been out of deer meat,,,,,,so when an 8 point came by last Saturday morning (just passing through minding his business) I decided he was a good one for some fresh meat,,,,,,,,
so first up is one that some like,,,some try,,,,and what I consider the best piece of eats on a deer,,,,the heart,,,,,,,,
trimmed and cut into pieces (didn't have whole heart as the .280 soft point blew most of it to shreds),,,,,
seasoned with salt and pepper,,,sautéed in butter,,,,,,,,
no bagels so pan grilled some small wheat bread my oldest daughter made for our pig pickin' Sunday,,,,,
and served up,,,,,,,,
next up is one I have wanted to try for a while,,,,,,deer tongue,,,,,,
I like beef tongue (though haven't had it in years) and wanted to check out this piece of the deer,,,,,,,,,
washed and cleaned,,,,,butter knife is for size reference,,,,
then simmered in water with some carrots, salt, and pepper,,,,simmered for 45 minutes,,,,,,,
take out,,,,(cooked tongue is ugly isn't it?)
skin it (scrape with a blade and the skin slides off),,,slice it up and served with some deli mustard,,,, and chow,,,,,
it was good eating,,,,made me want more of it,,,,but heart is still my favorite,,,,,,,

I trap as well and there is plenty of scraps (bones and such) for coyote bait from a deer,,,,just experimenting with more edible goodness!

We have always simmered the heart till done then chill slice and eat on crackers. But the way you describe sounds great! Hopefully try it out this week coming up. Also fresh deer liver seasoned and floured and cooked till rare.

Venison hearts are at the top of the list for me. I love 'em! I even try to place my shots higher into the lungs to avoid damaging them. Liver, on the other hand, is at the opposite end of the scale. Me no likey. I haven't tried venison tongue, though...sounds interesting, if it's anything like beef tongue.

I agree all for the heart used to love stuffed moose heart but not so much for liver and tongue. Can't wait to see what you do with the Buck oysters !
