Rhubarb Sauce

A few years ago, I dug up a small rhubarb plant of Dad’s & planted it in 1 of the corners of the house. My Grandma in PA always had rhubarb & made the best rhubarb sauce ever. I though I would try my hand at making some.

Ingredients:

4c rhubarb chopped
3/4c sugar
1/4c water
1/4 cup tapioca granules (option but can be used to help thicken the sauce)

Procedure:

Place all the ingredients in a saucepan; cover, and let simmer over medium heat until all the rhubarb has melted down.

Variations: a friend of mine peels the rhubarb. The sauce comes out green but tastes the same if you want something different. Also, you could add a tsp of cinnamon and a slice of fresh ginger when simmering.
