Ducks and Geese

Took a trip this past weekend out to Kansas for some ducks and Geese. Did okay weather was a little to nice so not a lot of birds pushed down yet but the outfitter we were with did some good scouting for our last hunt and put us on the meat. I got a couple of pretty good videos I'll see about loading. Chief.
First day of Cacklers and Speck's. First group of 6 Specks decoyed right in and all 6 came home with us.

Nice Cackler we got to come in while hunting duck's.

3 birds coming home for mount's my biddies Mallard and my Wigeon and Gadwall. I'm getting the Gaddy done for sure the Wig I may hold out to see if I get a better one this season. These being my first ones I'm mostly getting them done.

The Speck I'm mounting. My Taxidermy bill is going to high this year!

Congratulations Chief on some beautiful birds. They should make great mounts.

I feel as if I cook wild game pretty well and do I dare say I would rather have a duck breast properly prepared over a yearling deer backstrap butterfly steak.. :?

You cannot go over Med rare with duck, that is the key..

Goose, well canada goose is not good.. We have tried everything possible and as close as good ya get is so over powering it with whatever you season it with is all you taste.

All our goose is put to Jerky, it makes really good jerky.. We use High Mountain seasonings and go way under the recommendations of meat in the ratio.

I love a stuffed , grain fed northern Mallard, a trick to roasting them is cut out the oil glands on the top of the tail
before roasting them.

My grandma had a recipe for Canada goose. You roast a 8-12lb. bird in the oven, in a roasting pan, with about a 2lb. rock. After it has cooked for two hours. or so, you throw out the goose and eat the rock..Gravy is optional..

killed several short bill's 7 years ago due to a west wind blowing them into Indiana.

wish I would have had one of them mounted

Med rare is the key to cooking any ducks except Blue Bills just avoid those at all costs! Don't feed to the dogs! One if the best eating was the Sand Hill Crane flying Ribeye. Another way we do them is grilled poppers hammer them flat wrap around a Jalapeño with cream cheese and wrap bacon and grill those are good too. I think my buddy soaks them in Dales for a little while too. Chief

The only way I have found for Canadas is the ole trusty Crock Pot with lots of good tasting gravy and fixings. Other than that, I'd just as soon eat the feathers.

Neighbor has a recipe for making a corned beef meat out of the geese, claims no one can tell it isn't store bought corned beef.
