Preparing bird for Thanksgiving

Post by SwampDrummin »

Who’s done this? I’ve always wanted to give it a shot. Fry the whole bird.

I was thinking maybe I could put the whole bird in panty hose like you were gonna mount it and then thaw/pluck it before time to cook opposed to plucking it now and trying to stave off freeZer burn.

Thoughts? Warnings? Sage wisdom?

Ok I'm pulling this outta my azz. I would pluck now. I seriously doubt you could vaccum seal a whole turkey

What about wrapping in cling wrap heavily to keep air out and place in a bag and freeze

Lol, yeah he’s plucked. One of those thinking out loud idiot moments. I might go ahead and have a trial run now, can’t see how a deep fry would turn out bad but I remember a baked one my dad did when I was young that didn’t turn out too hot.

Anyone froze one that long or done anything special to prepare it that turned out nice?

Pluck it now. Then get a pot bigger than the bird, put a large garbage bag inside, &
put 1-inches of water in the bottom & freeze. When the bottom is frozen, add the bird
& position it so that nothing is touching the sides, fill with water so the bird is totally
covered, close the top of the bag & freeze. After it is solid, you should be able to pull
everything out of the pot or if you don't need the pot before you use the bird, you can
omit the bag. Just be sure that none of the bird is touching the sides of the pot.

The pot is just too keep the bag from pursting creating a mess.

I know, it's a PIA but it does keep the bird from freezer burning. It does take several
days to thaw.

It is possible that a butcher shop near you has a sealer big enough to seal the turkey for you.

Domestic ones in the store seems to be in some kind of vacuum seal bag. Maybe you could check that out

Try a simple brine, overnight. 1 cup kosher, 1 cup sugar per gallon. I am a fan of injection but think a simple brine adds more moisture

The Cajun injector or Tony chacheres are very good. Butter, garlic and either crushed red pepper or pepper injected works well

Also never cook to.time. Time is a suggestion, cook to temp, when deepest part of thigh is 165 pull. Internal temp is a key to moist poultry

I'd kill a fall bird if I wanted one for Thanksgiving.

When brining, I use canning and pickling salt because it dissolves in cold water.

Dad fried a jake I killed one spring, were on a father/son church trip at roaring river in Missouri. Absolutely disgusting, didn't help we accidentaly bought salt free ketchup for the fried taters. [emoji1787]

One of those stories of complete failure you tell years down the road for a good laugh. Tore me up as a 6 y/o kid as my grand dad was two camp sites over grilling 1" thick t bones.
