Smoked Boston Butt.
Smoked Boston Butt.
Been smoking fish and jerky for a few years now. Recently branched out and tried wings and a whole chicken as well as a turkey breast. Today I smoked my first Boston butt. I think it came out pretty darn good. FB has a group called Masterbilt Electric Smokers. Great bunch of folks and tons of smoking tips. Tomorrow I will make a NC vinegar sauce.

Looks good,i have the same smoker and have done a ton of different things in mine.
One thing i would do is test your temp probe, mine was not even close.

Looks good red. I'll shoot you a vinegar based recipe. I hate thick sweet sauces.
Re: Smoked Boston Butt.
I'm not a fan of thick sauces either. My Daughter was at a craft show and there was a guy selling BBQ with a vinegar sauce. Dang it was good.ICDEDTURKES wrote: ↑September 3rd, 2017, 6:55 am Looks good red. I'll shoot you a vinegar based recipe. I hate thick sweet sauces.

I can't take credit for this, it's off the BBQ brethren but is the best I've ever made. BBQ sauce usually have too many sweetener s in them, the brown sugar is just enough to tone down the acids from the vinegar.redarrow wrote: ↑September 3rd, 2017, 8:52 amI'm not a fan of thick sauces either. If you're in a pinch, the Heinz Carolina style is very good for a mass produced sauce and carried by most chain stores.
2 cups apple cider vinegar
1 cup ketchup
1 cup light brown sugar
½ cup water
2 TBS yellow mustard
1.5 TBS Kosher salt
1 TBS lemon juice
1 TBS paprika (don't use a spicy hot variety; I prefer a bright red Spanish paprika)
1 ½ tsp ground nutmeg
1 tsp celery salt
1 tsp fine ground black pepper
½ tsp ground sage
½ tsp granulated garlic
½ tsp cumin
Dash ground cayenne pepper (or to taste)
Add ingredients to a saucepan and bring to a simmer stirring often. Let sauce simmer for 10 to 15 minutes, remove from heat, cool, and serve. Store in the refrigerator. It gets better after a couple of days too.

Man you are inspiring me! I bought a smoker about a month ago. So far, some spare ribs, pork loin, turkey breast and a bear ham. Also some sides like corn on the cob in the husk and EGGS! Who knew? So far everything was edible but I got a long way to go on this. That pork butt is on the list. Yours looked KILLER!!
Re: Smoked Boston Butt.
I always do a big cooking Labor Day weekend and vacuum bag it for the winter. You can drop one of those bags of BBQ in a pot of boiling water and boil it for about 20-30 min and it taste just like it came off the smoker.
I may not be smart but I can lift heavy objects

Get after it. Butt is about as forgiving as anything. Probe when it hits 195 don't look at temp, when she probes like hot butter, done. Usually betw 200-205firedup wrote: ↑September 3rd, 2017, 9:07 pm Man you are inspiring me! I bought a smoker about a month ago. So far, some spare ribs, pork loin, turkey breast and a bear ham. Took mine out of the smoker at 203 (10.5 hrs) Double wrapped in foil, wrapped in a heavy towel, put it in the cooler for an hour. So tender it dang near pulled itself.

Had a big shindig with 2 birthdays. My mother and my grandmother (95)
Cooked what I thought was enough but more showed up than expected. So.. I had to do round 2 on the grill, in the rain
