I think your supposta remove the skin so the meat can absorb the smoke and spices. I keep my skins and make chicharrons latter.

Iv'e been to the Pink store many time. I lived between Deming and Columbus for 10 years and spent a lot of time on the mexico side. I don't think I would go into Palomas now though. Too dangerous. I live in Florida now anyways.
